While he napped on Saturday, I tried to figure out something to do with the crazy number of cucumbers that ripened all at once in the vegetable garden. Pickles are the traditional Southern way to preserve vegetables short and long term (there's even a how-to in the current Garden and Gun). So I pulled my trusty New Southern Garden Cookbook and made some quick pickles:
The goods
Sliced cucumbers and onions
Making the brine
Pouring over the vegetables to chill overnight
Quick pickles by Sunday. They keep for 1 week in the fridge. Bon apetit, y'all.
